Cheesy Creamed Mushrooms on Toast
This was one of my Mom’s favourite tricks to make something seem special - you just cream it and put it on toast. It is a nice lunch.
In a large pan, heat 2 tbsp. Butter over medium heat;
Cook and stir in 2 cloves minced garlic with 2 lb. Sliced mushrooms (any variety or a mix) for 5 mins. Or until mushrooms release their liquid.
Stir in 1 tbsp flour; cook for 1 min.
Add 2 cups half and half cream; bring to boil, stirring constantly.
Stir in 4 oz. crumbled blue cheese until melted.
Broil 4 thick slices French crusty bread on both sides.
Serve mushrooms over toast.
Garnish with minced parsley if desired.
