Chili Corn Carne


This version is full of vegetables and lighter than the regular recipes.

1 lb ground turkey or chicken
1 chopped onion
1 clove minced garlic
3 tomatoes, peeled and cubed
(2 lbs) or canned tomatoes
2 cobs corn or canned corn
1 c each coarsely chopped red and green peppers
1 can (19 oz) kidney beans, drained
1 tbsp chili powder
1 tsp each dried oregano, cumin, salt and vinegar

In a large saucepan over medium-high heat cook turkey, onion and garlic until turkey is browned and onion is soft. Add tomatoes to turkey. If using corn of cob cut corn off the cob and add to red and green pepper, kidney beans, chili powder and oregano, cumin, salt and vinegar to turkey mixture. Bring to a boil, reduce heat and simmer 15 mins. Serves 4-6.
